For my first post, I thought it would be fitting to talk about something very near and dear to me: PANCAKES!
When I started the 21 Day Fix, I thought I would have to give up some of my favorite foods for the sake of a smaller waistline, but that has not been the case...I have been trying so many different recipes and have been eating great food that is changing my body for the better.
Today, I'll be sharing the recipe for BANANA PANCAKES. As a disclaimer, let me just say that this is not going to be one of those blogs that is trying to convince mankind that all healthy food is delicious. I'd like to think I'm pretty realistic when it comes to "diet" foods. I know that a low-carb candy bar is not going to taste the same as a Hershey's with almonds. I know that I will never eat tempeh and say "this is better than meat!" That being said, these pancakes are pretty great. They may not be a Denny's short stack, but pancakes that actually taste like pancakes and fit the 21 Day Fix meal plan perfectly, make me a happy woman.
While I was making them this morning, I started thinking of all the mix-ins I want to try and the chance of this becoming a pancake-heavy blog increased by...a lot.
Now let's get to the good stuff:
INGREDIENTS:
- 1/2 yellow container of oats
- 2 eggs
-1/3 container of natural/unsweetened applesauce
-1/2 banana
-1-2tsp of vanilla extract
-1tsp of cinnamon/pumpkin pie spice (I've heard good things about apple pie spice, but have yet to try it so let me know how it tastes if you use it!)
-1tbsp semi-sweet chocolate chips (optional, but not really...why would you ever say no to chocolate??)
DIRECTIONS:
1. Blend the dry oats for 5-10 seconds before adding any other ingredients.
2. Add the eggs, banana, applesauce, vanilla and spice to the blender and blend for 25-30 seconds.
3. Pour the batter onto a heated pan or griddle and sprinkle chocolate chips on top.
4. Flip the pancakes once they start to bubble to reveal golden-brown loveliness.
5. Serve with pure maple syrup or honey and relish in the fact that you get to eat pancakes while losing weight!
This recipe makes 4-5 pancakes and equates to 1 yellow, 1 red, 1.5 purple
You can also count 1-2 teaspoons if you cook them in a pan and use cooking spray. I know that the choc. chips would count as a yellow, so if you decide to use them add that to the count...or don't. I didn't and I lost 2.5in from my waist last week so... do whatever your heart desires!
